    Papas con Chorizo

    Here’s a really, really simple recipe that’s full of flavor and very customizable. Papas con Chorizo is a hash made of potatoes and Mexican chorizo sausage that can be served in a variety of ways, and is sure to become a family favorite.

    Mexican Potatoes and Sausage

    Papas con Chorizo is a classic homestyle Mexican comfort food. It only requires two ingredients, along with a little oil and salt, though you can customize it with additional add-ins.

    The key is Mexican chorizo sausage. It has a bold and smoky flavor, hence the lack of need to add additional seasonings. If you’re not familiar with it, you can usually find it in the refrigerated section of supermarkets in bulk or link form. Do not confuse it with Spanish or Portuguese chorizo, which is pre-cooked.

    You can use any variety of potatoes in this dish. Waxy varieties will hold their shape a little better, but starchy potatoes are equally good here. I just use whatever I have on hand.

    Papas con Chorizo Recipe

    First, I boil the potatoes whole for a few minutes in salted water until they’re a bit soft, but not falling apart. When they’re ready, I drain them and dice them up into small bites. Alternately, you can dice them up raw and cook them in a skillet, but that method requires a lot more oil.

    While the potatoes are boiling, I heat a little oil in a skillet over medium-high heat, then add the chorizo and cook until it’s browned up and beginning to caramelize, about 8 minutes.

    Then, I add the cooked potatoes to the skillet and toss them with the chorizo. If the dish seems a bit dry, I add a little more oil. Finally, I taste and adjust for salt before serving.

    Serving Suggestions

    This Mexican hash is quite versatile. It’s a great filler for tacos, burritos, empanadas or tortas. I’ve even used it in stuffed peppers. You can also serve it just as is, or dressed up with toppings like cilantro, diced jalapeno, radish, tomatoes or avocado.

    One of my favorite ways to serve papas con chorizo is topped with a sunny side up egg or two. I’ll add a few splashes of hot sauce on the eggs, and it’s the perfect hearty breakfast.

    Papas con Chorizo is a versatile Mexican hash made of potatoes and flavorful chorizo sausage.

    Ingredients

    • 1.5 pounds potatoes, peeled and cut into ½ cubes
    • 1 Tbsp cooking oil
    • 12oz Mexican chorizo sausage
    • salt, to taste

    Instructions

    1. Place the cubes potatoes in a large pot and add enough water to cover them by about 1 inch, along with a bit of salt. Bring to a boil, then continue cooking until they are soft, yet still a bit firm, about 7-8 minutes. Once done, drain in a colander.
    2. While the potatoes are boiling, heat the oil in a skillet over medium-high heat. Add the chorizo and cook, breaking it up as you go along, until it is browned up and beginning to caramelize, about 8 minutes.
    3. Add the cooked potatoes to the skillet and toss them with the chorizo. If the dish seems a bit dry, add a little more oil. Taste and adjust for salt.
