This Crockpot BBQ Chicken is an easy and versatile dish that’s ideal for potlucks and other get togethers.
It’s a great dump-and-go recipe, where your trusty slow cooker does its magic.
When you’re craving some type of pulled meat, a crockpot is your best friend. Our Crockpot Crack Chicken and Crockpot Kalua Pork are just two examples of this slow cooker perfection.
Ingredients Notes
- Chicken – Typically, we are more fans of chicken thighs. However, for that pulled chicken experience, we use boneless skinless breasts for this recipe.
- Barbecue sauce – Our favorite is Sweet Baby Ray’s original. Note that the measurements for the other ingredients are based off of this, and may need to be adjusted if you use a different sauce. Taste and adjust before pouring on the chicken.
- Brown sugar – For a touch more sweetness. Honey could be used instead.
- Apple cider vinegar – To add some zing. Distilled white vinegar works as well.
- Smoked paprika – We add this to mimic that smokiness you get in conventional grilled BBQ chicken.
- Garlic powder – You could replace this with a couple of cloves of minced fresh garlic. But slow cooker meals are supposed to be lazy, right?
Slow Cooker Barbecue Chicken Recipe
- Place chicken breasts in the bottom of the slow cooker.
- In a bowl, whisk together barbecue sauce, brown sugar, vinegar, smoked paprika, and garlic powder. Pour this mixture over the chicken breasts.
- Cover and cook on high for 3-4 hours or on low for 6-7 hours.
- Shred the chicken with two forks, then toss with barbecue sauce.
How to Use It
We love this pulled chicken because of how versatile it is. I’m pretty sure you will too.
It’s also great as a flatbread topping, on baked potatoes, on nachos, or just as a main dish along with your favorite sides (think mac and cheese!)
Want a really great idea? Use it in a batch of Brunswick Stew.
And, or course, it a perfect filling for sandwiches. Load this shredded chicken up in between a bun along with some Coleslaw, and don’t forget the chips on the side.
Leftovers and Storage
Crockpot BBQ Chicken refrigerates very well in an airtight container. As it sits, the flavors get accentuated. Use within 3-4 days.
You can freeze it for future meals in airtight containers. So yes, even if it’s not for big crowds, go ahead and make a huge batch, you won’t regret it. Use within 3 months for best quality.
