Chimichurri is the condiment in South America, as well as around much of Latin America. It’s super simple to whip up, but will add so much flavor to your meals.

    What is Chimichurri?

Chimichurri is a simple sauce of olive oil, parsley, garlic and a few other flavor enhancers. It originated in South America, but has spread throughout Latin America.

Most traditionally it is served with steak, but it can be served with just about anything that demands a condiment. Serve it up with grilled meats, or slather it on a sandwich. Chimichurri is always a hit.

    Ingredients

    • Parsley – This is a main component in chimichurri. Fresh is mandatory.
    • Extra virgin olive oil – Another key ingredient. Go with a good quality EVOO.
    • Red wine vinegar – For a little tang.
    • Garlic – Freshly minced.
    • Oregano – I typically use dried, but if I have fresh on hand I use that.
    • Red chili pepper – Deseeded and diced.
    • Salt and pepper – To taste.

    How to Use Chimichurri

This sauce is very versatile. It goes with just about any grilled meat, and is a staple accompaniment to Churrasco, which is a marinated and grilled flank steak dish from South America.

I should note that although chimichurri is typically used as a dipping/drizzling sauce, it also makes for an excellent marinade.

Personally, I also love this sauce with grilled chicken of seafood. Try it with shrimp or swordfish, and you’ll be in for a real treat!
