    Buffalo Chicken Sandwiches

    Football playoff season is ramping up, so now seems like the perfect time to share these tasty and spicy Buffalo Chicken Sandwiches. They’re so easy to make, thanks to that magic contraption called a slow cooker, and are sure to satisfy your hungry crowd.

    Who doesn’t love a good hearty sandwich? I mean, they’re such a great excuse to eat with your hands. Whether a deli-style Reuben, a kinda messy BBQ Chicken Sandwich, or my personal favorite Shrimp Po’ Boy, I’m always glad to eat something between a couple of slices of bread.

    Now today’s sandwich is especially dedicated to my fellow spicy food lovers. It’s got a good bit of kick, which is so well complimented by some tangy blue cheese. Yep, you’ll want this one in your repertoire for Super Bowl Sunday!

    Ingredients

    • Chicken – Boneless skinless breast. Though I usually prefer thighs, breast meat is better for shredding.
    • Hot sauce – Louisiana style. Think Crystal, Tabasco, Franks Red Hot, or Valencia.
    • Ranch seasoning – For balance. Note that this is the powdered seasoning, not the dressing.
    • Honey – Just a bit, it helps cut down the saltiness.
    • Butter – Because butter makes everything better.
    • Buns – Regular sized sandwich buns for a main course, sliders for finger food appetizers.
    • Blue Cheese – Because it goes so well with those buffalo flavors.

    Buffalo Chicken Sandwich Recipe

    First, I slow cook the buffalo chicken by placing the chicken breasts in the crockpot, followed by ranch seasoning, honey, hot sauce and butter. I cover and cook on low for 6-8 hours, or high for 4-5 hours.

    After cooking, I remove most of the liquid to a bowl. I then shred the chicken with two forks, then gradually add back in the liquid, stirring as I go. For sandwiches, I typically do not use all of the liquid, as it can get too saucy to hold up well on a bun. You want the chicken well coated in sauce, but not drippy.

    Then, all that’s left is to assemble the sandwiches. I divide the chicken among the bottom half of the buns, then sprinkle on some crumbled blue cheese, and then place the bun top over everything before serving.

    ** Note: Only prepare as many sandwiches as will be eaten in a short amount of time. They can become soggy, and are best eaten fresh. The chicken can be kept on the warm setting, covered, in the slow cooker if the sandwiches are to be eaten over an extended period.

    Serving Suggestions

    If you’re serving these sandwiches as part of a game day spread, you will probably have quite a few sides to go along with them. It might even be a potluck situation where there is a big variety depending on what your guests bring.

    Personally, I like some type of salad with a creamy element to offset the tangy spiciness of the sandwiches. Some top picks are Potato Salad, Hawaiian Mac Salad and KFC Coleslaw.

    Buffalo Chicken Sandwiches

    My easy Buffalo Chicken Sandwiches, featuring slow cooker shredded buffalo chicken, are great for game days, or anytime you crave a little kick!

    Ingredients

    • 2 pounds boneless skinless chicken breast
    • 1oz ranch seasoning
    • 2 Tbsp honey
    • 6oz Louisiana style hot sauce
    • ½ cup butter
    • 8 sandwich buns (or 16 slider buns)
    • ½ cup crumbled blue cheese

    Instructions

    1. Place chicken breasts in the crockpot, followed by ranch seasoning, honey, hot sauce and butter.
    2. Cover and cook on low for 6-8 hours, or high for 4-5 hours.
    3. After cooking, remove most of the liquid to a bowl. Shred the chicken with two forks, then gradually add back in the liquid, stirring as you go. You may not use all of the liquid, it depends on how saucy you want it.
    4. Split buns and divide shredded buffalo chicken among the 8 bun bottoms. Atop the chicken, sprinkle 1 tablespoon of blue cheese on each sandwich (½ tablespoon for sliders). Place the top half of the bun on top of each sandwich, and enjoy!

    Notes

    1. Only assemble as many sandwiches as will be consumed in a short time, as they are best eaten fresh. Leftover buffalo chicken can be refrigerated for 3-4 days.
