    Million Dollar Spaghetti

    The name “Million Dollar Spaghetti” really sets expectations dangerously high for a casserole made mostly from pasta and ground beef. But then it comes out of the oven all bubbling and cheesy with those creamy layers tucked between the spaghetti and rich meat sauce, and suddenly the dramatic name starts sounding surprisingly reasonable.

    After one bite, you start realizing whoever first added that creamy cheese layer in the middle probably knew they had permanently changed baked spaghetti forever.

    Now in our house, spaghetti is serious business. Jason is perfectly happy with a big plate of traditional Spaghetti with Meat Sauce or Spaghetti and Meatballs and sees very little reason to improve on that situation.

    Meanwhile, I keep making things like Mexican Spaghetti and Makaronia Me Kima because I enjoy testing the boundaries of what spaghetti can become.

    So when I explained that this version involved layering spaghetti with cream cheese, ricotta, sour cream, meat sauce, and mozzarella before baking it into a casserole, the reaction was less “that sounds amazing” and more long suspicious silence paired with his usual raised eyebrow of concern. There may have even been a facial expression that suggested I was overcomplicating a perfectly good plate of spaghetti.

    Then he ate it, went back for seconds, and suddenly all the skepticism disappeared. Which means Million Dollar Spaghetti officially managed to win over a very hardcore traditional spaghetti lover. Big win in my books.

    What is Million Dollar Spaghetti

    Million Dollar Spaghetti is one of those internet famous baked pasta recipes that completely blew up on TikTok and social media over the last few years… and after making it, I fully understand why.

    At its core, it’s a baked spaghetti casserole layered with rich meat sauce, spaghetti noodles, a creamy cheese filling, and lots of bubbling mozzarella baked until hot and golden around the edges. Somewhere between baked spaghetti and lasagna, but creamier, cheesier, and even more cozy.

    Nobody really seems to know exactly who created Million Dollar Spaghetti first. Versions of it have been floating around the internet, potlucks, and family kitchens for years in slightly different forms. But once TikTok got hold of it, things escalated quickly. Suddenly everybody was posting giant cheesy scoops, dramatic cheese pulls, and bubbling casserole dishes coming out of the oven.

    And honestly… it’s very easy to see why this one went viral.

    Ingredients Needed

    You can find exact ingredient amounts in the recipe card at the end of this post. Here are the things you will need:

    • Ground beef – I like using 85/15 ground beef because it has enough fat to create a rich, flavorful meat sauce without becoming greasy. Leaner beef works too, though the sauce won’t be quite as hearty. You can also substitute ground turkey or Italian sausage for a different flavor.
    • Onion and bell pepper – These vegetables form the flavorful base of the meat sauce, adding sweetness and depth as they cook. Any variety of onion or color of bell pepper will work.
    • Garlic – Fresh garlic is best
    • Italian seasoning – A simple blend of herbs that gives the sauce its classic Italian-American flavor. If you don’t have Italian seasoning, use a combination of dried oregano, basil, and parsley.
    • Marinara sauce – Any of your favorite store-bought brands work perfectly.
    • Oil – Just a little olive oil helps soften the vegetables before the beef is added. Any neutral cooking oil can be used instead.
    • Salt and black pepper – Taste the meat sauce before adding extra salt, as marinara sauces can vary quite a bit in sodium.
    • Spaghetti – Regular spaghetti is classic, but thin spaghetti or linguine also work well. Cook it just until al dente since it continues cooking in the oven.
    • Cream cheese – This is what gives the famous “million dollar” layer its rich, creamy texture. Let it soften at room temperature first so it blends easily with the other cheeses.
    • Ricotta cheese – Adds a creamy, lasagna-style layer that makes this casserole extra indulgent. Cottage cheese is a popular substitute if you prefer its texture or already have it on hand.
    • Sour cream – Makes the cheese layer even creamier while adding a little tang that balances the richness.
    • Parmesan cheese – This melts into the cheese sauce making it extra tasty.
    • Mozzarella cheese – Creates that irresistible golden, bubbly topping. I recommend whole milk mozzarella, as it melts much better than part skim.
    • Fresh parsley – For that final garnish.

    How to Make Million Dollar Spaghetti

    1. Make meat sauce: The whole thing starts with a rich hearty meat sauce. I start by heating a little oil in the pan and cooking the onion and green bell pepper until softened.

    Then the ground beef goes in. I break it up as it cooks, season with salt and pepper, and cook it until it is no longer pink. In the last minute, I stir in the garlic.

    Then I stir in the marinara and Italian seasoning, and let everything simmer for about 15-20 minutes.

    2. Boil pasta: While the sauce simmers, I boil the spaghetti in salted water. Just to al dente, remember.

    3. Make cheese sauce: Meanwhile, the “million dollar” layer comes together with cream cheese, ricotta, sour cream, and parmesan, along with a little parsley, mixed into one creamy cheesy situation that makes it very clear this was never aiming to be a light dinner.

    4. Toss pasta: Once the spaghetti is cooked, I toss it with some of the meat sauce. That little step keeps the noodles flavorful all the way through and helps everything bake together much better.

    5. Assemble casserole: Then comes the layering.

    A little meat sauce goes into the bottom of the baking dish first, followed by spaghetti, the creamy cheese layer, and more meat sauce. The layers get repeated until the pan is full, then everything gets topped with mozzarella.

    6. Bake: Now, I cover the casserole loosely with foil and bake at 350°F. After 30 minutes, I remove the foil and continue cooking for about 15 more minutes, until it’s hot, bubbly, and golden around the edges.

    • Cook the spaghetti just to al dente: The pasta keeps cooking in the oven, so slightly undercooking it at first keeps the final texture perfect instead of soft and mushy.
    • Soften the cream cheese first: It blends much more smoothly into the ricotta and sour cream and gives you a creamier filling without little lumps everywhere.
    • Use a deep baking dish: This casserole gets very layered and generously cheesy very quickly. A shallow dish can turn into a bubbling overflow situation fast.
    • Let it rest before serving: Giving it about 10 minutes after baking helps the layers settle a bit and makes scooping much easier.

    Variations

    You can easily change this recipe depending on what you have or what your family likes best.

    Italian sausage works great instead of ground beef, or you can do half beef and half sausage. Mushrooms, or extra peppers also fit right into the meat sauce nicely.

    If you like a little heat, red pepper flakes or spicy Italian sausage work really well here too.

    And if your family loves extra cheese, adding a little mozzarella into the middle layers is never a bad decision.

    Million Dollar Spaghetti stores really well, and might taste even better the next day once all those layers settle together overnight.

    Leftovers keep in the fridge for about 4 days. When reheating, I like adding a tiny splash of water before microwaving so the pasta stays nice and creamy instead of drying out.

    You can also reheat bigger portions in the oven covered with foil until warmed through, which brings back that fresh baked pasta feel again.

    Ingredients

    Meat Sauce

    • 2 tablespoons olive oil
    • 1 medium onion, diced
    • 1 green bell pepper, diced
    • 2 pounds ground beef (I recommend 85/15)
    • salt, to taste
    • pepper, to taste
    • 3 large garlic cloves, finely chopped
    • 24oz marinara sauce
    • 2 teaspoons Italian seasoning

    Million Dollar Cheese Sauce

    • 8oz cream cheese, softened
    • 1 cup ricotta cheese (you can sub it with cottage cheese)
    • 1 cup sour cream
    • ½ cup grated parmesan cheese
    • 1 tablespoon fresh parsley, chopped

    Casserole

    • 1 pound spaghetti
    • 8oz grated mozzarella cheese

    Instructions

      1. Preheat the oven to 350°F.
      2. Heat the oil in a large skillet or Dutch oven over medium heat. Add the onion and green bell pepper and cook for 6-7 minutes until softened. Stir in the ground beef and cook until browned, breaking it up as it cooks. Season it with salt and pepper. Add the garlic and cook another minute until fragrant. .
      3. Pour in the marinara sauce and add the Italian seasoning. Mix well. Let the meat sauce simmer gently for about 15-20 minutes so all the flavors come together.
      4. While the sauce simmers, mix the softened cream cheese, ricotta cheese, sour cream, parmesan cheese and parsley together in a bowl until smooth and creamy.
      5. Cook the spaghetti according to package directions until al dente. Drain well, then return the noodles to the pot and toss with about 1 cup of the meat sauce so the spaghetti stays flavorful and doesn’t dry out while baking.
      6. Spread a very thin layer of meat sauce on the bottom of a lightly greased 9x13 baking dish. Add half of the spaghetti mixture in an even layer, then spread half of the million dollar cheese mixture over the top. Spoon over a layer of meat sauce.
      7. Repeat the layers with the remaining spaghetti, remaining cheese mixture, and remaining meat sauce. Finish with the mozzarella cheese evenly sprinkled over the top.
      8. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and continue baking another 15 minutes until the cheese is melted, bubbly, and lightly golden around the edges.
      9. Let the Million Dollar Spaghetti rest for about 10 minutes before serving so the layers can settle slightly.
