    Romesco Sauce

    You won’t be able to get enough of this Romesco Sauce. It’s smoky, nutty, a little tangy, and so versatile.

    We’re always on the lookout for a great homemade sauce recipe to add some big flavors to our foods, and have quite an assortment here on GypsyPlate. Romesco is one that we first came across in Spain, specifically Catalonia. There we had it served with locally caught fish, which was its original use. But once we started making this foreign delicacy in our own kitchen, we started trying it with all sorts of things.

    Ingredients

    • Roasted red peppers – Make it easy on yourself and use jarred roasted peppers.
    • Tomatoes – I’ve tried the recipe with both fresh and canned. My top choice is fire roasted diced tomatoes, because they add a little more smoky flavor and are tangier than fresh.
    • Almonds – These add a lot of substance to the sauce. You can also use pine nuts, hazelnuts, or a combination.
    • Extra virgin olive oil – I always use a boldly flavored variation for this recipe.
    • Garlic – Always a nice addition.
    • Parsley – Fresh, please.
    • Paprika – For a pop more color, and because it’s Spanish.
    • Crushed red pepper flakes – For a hint of heat.
    • Lemon juice and red wine vinegar – For a little tang.
    • Salt – To taste.

    Romesco Sauce Recipe

    This is easy. All I do is place everything in my blender (a food processor works too) and blend it to a smooth consistency. Then I give it a taste and add salt if necessary. That’s it!

    Serving Suggestions

    As I mentioned earlier, this sauce was originally developed as an accompaniment to fish. It is also great with other seafoods like grilled or pan seared shrimp or scallops, or even with calamari.

    It’s also great with mild land based meats like chicken (great as a wing dipping sauce!) or Pork Chops. We love it slathered on Chicken Burgers.

    Some other ideas: as a pasta sauce, pizza sauce, or as a dipping sauce for fries, roasted veggies or nice crusty bread.

    Romesco Sauce is an easy to whip up Spanish recipe that goes great drizzled over grilled meats and seafoods, or as a pasta sauce or dipping condiment.

    Ingredients

    • 14oz canned fire roasted tomatoes, drained
    • 12oz roasted red peppers, drained
    • ¾ cup almonds
    • ¼ cup extra virgin olive oil
    • ¼ cup fresh parsley
    • 1 tsp paprika
    • 1 tsp crushed red pepper
    • 2 cloves garlic
    • 1 Tbsp red wine vinegar
    • juice of ½ lemon
    • salt, to taste

    Instructions

    1. Place all ingredients in a blender or food processor. Blend until you have a smooth consistency.
    2. Taste and adjust for salt.
    3. Serve as a drizzling sauce for meats, seafood or vegetables, or toss with pasta.
