    35 BEST Mexican Vegetarian Recipes

    This collection of easy and delicious Vegetarian Mexican Recipes will take your veggies to a whole new level of flavor. This simple rice is a great side dish:

    Ingredients

    • 2 cups water
    • 1 tsp salt
    • 1 cup basmati or jasmine rice
    • 1.5 Tbsp lime juice
    • 1 Tbsp olive oil
    • 1/3 cup cilantro, chopped

    Instructions

    1. Bring water and salt to a boil in a medium saucepan.
    2. Stir in rice. Reduce heat to medium low, cover, and cook 20 minutes.
    3. While rice is cooking, mix oil, lime juice and cilantro in a small bowl.
    4. Once rice has finished cooking, remove from heat and fluff with a fork. Allow to cool for a couple of minutes, then toss in cilantro lime mixture.
