    This collection of Chinese Soup Recipes includes twenty five great soups that highlight the best of Chinese cuisine.

    Ingredients

    • 2 Tbsp cooking oil
    • 2 small shallots, sliced or chopped
    • 2 large garlic cloves, finely chopped
    • 1 inch ginger, peeled and finely chopped
    • 1 cup sliced shiitake mushrooms
    • 4 baby bok choy, halved
    • 6 cups chicken or vegetable broth
    • 2 Tbsp soy sauce
    • 1 Tbsp rice or white vinegar
    • 1 tsp sesame oil
    • 20-25 fresh or frozen wontons, dumplings, or potstickers
    • scallions, sliced (green parts only for garnish)
    • Chili oil or chili crisp, for serving (optional)

    Instructions

    1. Heat oil in a soup pot and sauté shallots, ginger and garlic for 2-3 minutes. Add in shiitake mushrooms and sauté for a couple of minutes.
    2. Stir in the chicken broth and bring to a boil over high heat. Add in soy sauce, rice vinegar and sesame oil. Simmer for a couple of minutes over medium high heat.
    3. Add the bok choy and partially cook 2-3 minutes, then add the frozen wontons and simmer for 2 to 3 minutes, or until they float and the bok choy is wilted, but still has a little crunch. Taste and adjust soy sauce and vinegar to your taste.
    4. Serve the broth in bowls with wontons and bok choy, and garnish with scallions and chili oil.
