Pasta Sauce Tips
- Use good quality ingredients: If using canned tomatoes, we recommend San Marzano.
- Let it simmer: Don’t be tempted to rush the cooking process—sauces need time to develop their flavors. Let your sauce simmer for at least 30 minutes, or even longer if you have the time.
- Taste and adjust: Before serving, taste your sauce and adjust the seasoning as needed. Add more salt and pepper if it needs it.
- Get creative: There are endless possibilities when it comes to pasta sauces, get creative and experiment with different ingredients and add ins!
- Thin it out: If your sauce is too thick, thin it out with some chicken broth, water, olive oil or cream, depending on the type of sauce. Conversely, if it’s too thin, cook it down until it reaches the desired consistency.
- Freeze it for later: Except for cream based sauces, leftover pasta sauce can be frozen for up to 3 months. Just place it in a freezer-safe container and thaw it out when you’re ready to use it again

- 2 28 oz cans of whole tomatoes
- 1/3 cup extra virgin olive oil
- 3/4 finely chopped onions
- 4 finely chopped garlic cloves
- 1/4 tsp black pepper
- fresh basil
- fresh oregano
- Pinch of red pepper flakes
- Salt, to taste
- Sugar, to taste
- In large, heavy bottomed pan, add olive oil, onion, garlic and half of the herbs. Slowly bring up heat and cook until softened.
- While other ingredients are heating up, pour tomatoes into a large bowl and crush them by hand into large chunks.
- Add tomatoes, black pepper and red pepper to pan, simmer for 45 minutes, partially covered.
- Remove from heat, taste. Does it need a little salt or sugar? Add to your liking. Mix in fresh herbs. Done!
