    The 35 BEST Leftover Rotisserie Chicken Recipes

    This tasty collection of easy Leftover Rotisserie Chicken Recipes includes plenty of quick, family friendly, weeknight dinner ideas. We especially love this pot pie casserole:


    • 2 cups rotisserie chicken, shredded or diced
    • 1 cup onion, chopped
    • 1/2 cup carrots, chopped
    • 1/2 cup celery, chopped
    • 1 cup frozen corn, thawed
    • 1 cup frozen peas, thawed
    • 3-4 garlic cloves, finely chopped
    • 2 Tbsp flour
    • 2 cups chicken broth
    • 2 cups heavy cream
    • 3 cups cooked noodles (bow ties)
    • 1/2 cup panko
    • 1/4 cup parmesan
    • 2 Tbsp butter
    • Salt to taste
    • Pepper to taste


    1. Thaw frozen peas and corn. Shred or cube the rotisserie chicken. Pre heat the oven to 375° F
    2. Cook the noodles according to the instructions on the packet. You want them al dente.
    3. Heat butter in a 12" cast iron skillet over medium heat. Add onion, carrots, celery and garlic and sauté for 3-4 minutes. Season with salt and pepper.
    4. Add in flour and cook for a minute stirring continuously.
    5. Stir in chicken broth and cream and cook stirring for 3 minutes, till the sauce thickens up a bit.
    6. Add chicken, peas and corn, and noodles. Mix well.
    7. Mix parmesan and panko in a bowl and sprinkle it evenly over the top of the casserole.
    8. Pop this casserole in the oven to bake uncovered for 25-30 minutes.
    9. Remove from oven and allow to cool for a few minutes before serving.
