Tips for Cooking with Chicken Breast
- Choose the right chicken breast. When it comes to chicken breast, not all are created equal. You’ll want to choose a chicken breast that is plump with firm, white flesh. Avoid chicken breasts that are dry, have any bruises or discoloration.
- Season the chicken breast. Seasoning your chicken breast is key to ensuring that it is flavorful and not bland. You’ll want to use a variety of spices and herbs to season your chicken breast, depending on the dish you’re making.
- Preheat the oven. You’ll want to preheat your oven before cooking your chicken breast so that it cooks evenly throughout.
- Take the chicken out of the refrigerator 30 minutes prior to cooking, to allow it to come to room temperature.
- Cook the chicken breast until it reaches an internal temperature of 165 degrees Fahrenheit. Below that it is not safe to eat, and above that it begins to dry out and become tough.

Spicy Chicken Recipes
- 4 boneless skinless chicken breasts
- 2 Tbsp butter
- 1 Tbsp olive oil
- 2 tsp salt
- 2 tsp pepper
- 1.5 pt cherry tomatoes, halved
- 3 Tbsp orange marmalade
- 2 tsp red wine vinegar
- 1/3 cup fresh basil
- Melt 1 Tbsp butter with olive oil in skillet over medium heat.
- Season chicken with salt and pepper, cook 5 minutes per side, until slightly browned. Remove to plate and set aside.
- Lower heat to medium-low, add remaining butter to pan. Once melted, add half of the cherry tomatoes, scrape browned bits from chicken and mix.
- Add 3-4 Tbsp water, vinegar, orange marmalade and remaining cherry tomatoes. Cook about 5 minutes, stirring continuously. Add salt and pepper to taste, along with basil.
- Serve tomato mixture over chicken.
