Ingredients
- 1lb sea scallops
- 2 beaten eggs
- 1 cup bread crumbs
- Salt and pepper to taste
Instructions
- Heat oil in a skillet to 350 degrees.
- Put breadcrumbs on a plate and season with salt and pepper.
- Roll scallops in breadcrumbs , then dredge in egg, then again roll in breadcrumbs.
- Fry scallops 2-3 minutes until golden brown. If necessary, cook in batches, do not overcrowd.
- Remove to paper towel lined plate before serving.
