- 3-4 lb pork loin roast
- 2 Tbsp olive oil
- 1 Tbsp salt
- 1 Tbsp black pepper
- Preheat oven to 400°F.
- Rub olive oil on all sides of roast, then rub on salt and pepper.
- Place pork loin fat side up in roasting pan, then put in pre-heated oven.
- Bake 20 minutes per pound, or until internal temperature of roasts reaches 145°F when measured with a meat thermometer.
- Remove from oven, tent with foil, and allow to rest 10 minutes before carving.
