- 2 1/2 cups all-purpose flour
- 1/2 Tbsp sugar
- 1/2 tsp salt
- 2 sticks cold unsalted butter, cut into 1/4" pieces
- 7 Tbsp ice water
- Put flour, sugar and salt into a food processor and pulse until mixed.
- Add butter and pulse until the mixture forms coarse crumbs.
- Add ice water and pulse until moist clumps form. Feel the dough. If it is not slightly sticky, add a little more water.
- Transfer dough to a floured surface. Divide in half and roll into two flat disks. Cover with plastic wrap and refrigerate 1 hour before using.
