Summer is at our doorstep. This is the time when most of your gardens are full of plump, juicy tomatoes in all beautiful colors. When it comes to cherry tomatoes, I might be one of their biggest fans. My love for these little cherry tomatoes shows in many of our GypsyPlate recipes.
Cherry tomatoes are full of flavors, crunchy fresh, bursting with juices. They not only go great in salads but cooking with them produces one of the tastiest and best looking meals.
We decided to make a list of all the great cherry tomato recipes you can make this season. They can be grape tomatoes, or cherry tomatoes, or cherry heirloom tomatoes or cherry tomatoes on the vine. All of them can go in any of these following recipes.

- 16 oz cherry tomatoes, halved
- 2 Tbsp olive oil
- 1 garlic clove, minced
- 2 Tbsp fresh herbs (basil, oregano and parsley), finely diced
- Salt and pepper to taste
- Preheat oven to 400°F.
- Toss cherry tomato halves with olive oil, salt and pepper in a bowl.
- Spread cherry tomato mixture on a lightly greased baking sheet.
- Bake in preheated oven for 25 minutes.
- Garish with fresh herbs.
