    Lamb chops are always a special meal, not to mention that they can be quite pricy, so you want to make sure to pick those perfect side dishes to round out the meal.

    Personally, I like both a starch and either a vegetable or salad to pair with my lamb chops. Sometimes I even like a nice sauce to compliment the meat. So with that in mind, I’ve included a big variety of accompaniments to choose from.

    Ingredients

    • 6 Tbsp butter, divided
    • 16oz fresh spinach (or 1lb frozen)
    • 3 cloves garlic, finely chopped
    • 1/4 cup all purpose flour
    • 1.5 cups milk
    • 1/2 cup shredded parmesan cheese
    • salt and pepper to taste

    Instructions

    1. Melt 2 Tbsp butter in a skillet over medium heat. Add spinach and sauté till wilted.. Remove to a plate or bowl. (If using frozen spinach, simply thaw in the microwave).
    2. Melt the remaining butter in the same pan. Add garlic and cook for a minute or two, till it becomes fragrant.
    3. Stir in flour to create a smooth roux.
    4. Gradually add milk, stirring continuously to avoid lumps.
    5. Mix in parmesan cheese. Once melted, stir in spinach. Taste and adjust for salt and pepper.
