Ingredients
- 6 Tbsp butter, divided
- 16oz fresh spinach (or 1lb frozen)
- 3 cloves garlic, finely chopped
- 1/4 cup all ppurpose flour
- 1.5 cups milk
- 1/2 cup shredded parmesan cheese
- salt and pepper to taste
Instructions
- Melt 2 Tbsp butter in a skillet over medium heat. Add spinach and sauté till wilted.. Remove to a plate or bowl. (If using frozen spinach, simply thaw in the microwave).
- Melt the remaining butter in the same pan. Add garlic and cook for a minute or two, till it becomes fragrant.
- Stir in flour to create a smooth roux.
- Gradually add milk, stirring continuously to avoid lumps.
- Mix in parmesan cheese. Once melted, stir in spinach. Taste and adjust for salt and pepper.
