Ingredients
- 1lb shrimp, peeled and deveined
- 2 Tbsp olive oil
- 3/4 cup pesto sauce
- 1.5 cups cherry tomatoes
- 4 cups cooked grits
Instructions
- Heat olive oil in a skillet over medium high heat.
- Add shrimp and cook until pink and opaque, about 1-2 minutes per side.
- Reduce heat to low, add in pesto sauce and cherry tomatoes. Cook until sauce is warmed.
- Serve immediately over warm grits.
